Ingredients

Spinach or any vegetable-500 gm
Garlic cloves - 2
Onion-1(small)
Red chilly powder-1/4 tsp
Turmeric-1/4 tsp
Coconut-1 cup
Salt-1 tsp
Green chilly-1(slit)
Oil-1 tbsp
Mustard seeds-1/2 tsp
Rice-1 tsp
Shallots-2(finely sliced)
Curry leaves-10


Method of preparation
Grind garlic, onion, red chilly powder, coconut and salt to a paste with some water.



Put the spinach in a pan, add 3 tbsp water and cover and cook on low heat. When the spinach wilts, add coconut paste and green chilli to this. Cover and cook till done. Heat some oil in a pan. Add mustard seeds. When mustard pops, add rice and stir till for sometime and add shallots. Fry till golden brown. Now add the curry leaves and fry for a few seconds. Pour this over cooked spinach. Mix well and serve hot.
